Spring Break - Day 1

We spent a part of our Spring Break at Bryce Canyon with the Okerlund family.  We stayed at the Ruby Inn where we barbequed our dinners outside, hiked, swam in the pool, and explored their huge gift shop.  It was great and we left with lots of memories!

Aebleskivers - General Conference

The Jensen name comes from Denmark along with family stories and a yummy breakfast recipe.  Cameron grew up eating aebleskivers passed on down through the generations.  Aebleskivers, meaning apple slices, are Danish traditional pancakes.  We celebrate our Jensen name by making aebleskivers for breakfast on General Conference Sundays.  Cam added strawberries to this batch.

Sending love to Grandma and Grandpa Jensen serving in Adam-ondi-Ahman, Missouri!

The recipe can be found HERE in this post three years ago.

GC Jensenite snippet:
As President Monson was closing the morning session with his talk on charity being the pure love of Christ and being kind within our families.... Jensen 2, Jensen 3, and Jensen 4 dog-piled each other fighting over who would pet Oreo (SERIOUSLY!).  Jensen 1 was upset because she couldn't hear President Monson and pushed Jensen 3 in the face to supposedly stop the commotion which only made it worse.  At that same moment Jensen 4 got up, ripped up her art she was working on, threw it to the ground, and stomped to her room in frustration for not being able to make it PERFECT!  Cameron rolled his eyes and I turned up the volume.  We totally blame the dog!

Thank goodness we are still in our '"4 minutes" of "life".

Happy Conference!

Redmond Church

Because of my fascination for antiques and history,  this beautiful abandoned church is my favorite place in Redmond.   This historic LDS chapel was built in 1915 and it looks like the other portion (gym and kitchen) was added later.   Cameron attended it until he was 8 years old (1979).  Due to the foundation sinking, a new church was built and this one was sold.  It was operated as a roller staking rink for years.  Cameron took me there one weekend when we were dating.  Later, it just sat and got vandalized.  Each time we go to Redmond, it calls for me and I go to say hi.  It is musty and smelly and seeking for rest.  We've become friends.

The church pew that I have had my eye on for years.  It is the only one left and is waiting for me to take it home.  We have left messages with the owner but no replies.  :(

The chapel - so lovely with it's hidden memories.

The classrooms are located downstairs.  Jarin and I were too scared to go down.

The gym is now owners to teenage skaters who have built ramps and made a cozy sitting section in the corner.

Redmond's Town Hall

This is Redmond's town hall.  Cameron and I had our wedding luncheon here 20 years ago.  The kids come back every year to celebrate the 24th of July.  It is also great for gatherings.  Grandma and Grandpa Jensen's missionary farewell luncheon was held here.

Makayla's Jane Eyre moment!

Jarin's Jane Eyre moment!

Grandma and Grandpa Are Going Away on a Mission

Today we went to Redmond to celebrate Grandma and Grandpa's missionary farewell to Adam-ondi-Ahman, Missouri on March 17th.  It was a good day with family, food, memories, and love.
I grew up listening to "Songs for a Mormon Child"  by Janeen Brady and still love them.

42 Hour Mullet

For weeks Jarin has been growing out his hair and mentally preparing us for his upcoming mullet -- cringe - shake - shudder.   Since Cameron sported one back in the days, I couldn't refuse Jarin his dream hair.
On Saturday he came home looking Duran Duranish.  Not bad I thought, he made it look good.
On Sunday he got compliments at church (people at church are so nice).
On Monday I got the following text at 9:31 am.

J:  I've decided to cut my mullet tonight mom.
Mom:  Why?
J:  Cause the chicas don't like it.

Thank you chicas!  There is time and place for mullets.  It has past.

Jarin:  I'm hairless dad!
Dad:  Yep!

Let's keep it in the 80's!

Testimony Bingo

From an early age I have taught my kids to listen to General Conference in creative ways.  Our favorite was Conference Bingo.  As the kids sat in front of the television, I presented them with a bowl of small candies and a bingo card.  If a speaker spoke on a certain topic on the card, the kids hurried and put a candy on it.  Once they got Bingo they gobbled up their candies and started over.  It was a great motivator to listen, learn, feel the spirit, and inhale sugar all at the same time.
Today as we were sitting in church, I glanced over at all five of my children and was pleased to see how attentive they were to the messages being delivered during testimony meeting.  Then I saw them scratching off boxes on some homemade Bingo cards that Makayla had made for everyone.  I inspected this activity further and just grinned and left them to their game.  Each bingo square held a topic or a detail describing the speaker.  For example:  wearing a blue tie, crying, balding, a Young Women leader, quoted a scripture, grabbed a kleenex, teenager, old man, told a story, inspiring, a Prophet quote, etc.
The kids were so attentive (even without sugar) that I wanted to play too, but I didn't.  My job is to set a good example... so I discreetly maneuvered my iPad to capture the moment.
Rebekah was a true player and bore her testimony so that Makayla could mark off 'family testimony' to get a bingo.  Way to go Rebekah!  I was half tempted to go up to quote a favorite scripture and grab a tissue off the pulpit to ensure that someone got blackout, but time ran out.   Maybe next month I'll be ready.

Someone just couldn't wait!

It's been awhile since I made my yummy whole wheat bread, so one Sunday afternoon I surprised my family with five freshly baked loaves of bread.  I set them out to cool and went to take a nap after all my hard work - whew!   When I awoke,  someone…. or two, decided to be the designated bread tasters.  The one that dug a hole in the middle of the loaf just couldn't wait - I'll take that as a compliment or perhaps they heard me coming down the hall and ran.  I'll never know.
I got my recipe from a dear friend in my neighborhood.  It is called Becky's Bread, from my friend Becky of course.  It is the easiest recipe.  It takes a total of 1 1/2 hours from start to finish - sometimes less.  Actual work is less than 20 minutes if you are as fast as Becky.  :)

Becky's Bread
Mix…
6 cups hot water
1/2 cup honey
3/4 cup oil
2 heaping tablespoons salt
2 tablespoons dough enhancer
4 tablespoons yeast
Add 10 cups wheat flour and mix + 1 cup of dry oatmeal
Add 4 more cups of wheat flour and mix
Add more until the dough is not sticky
Knead in mixer on high for 8 minutes.  Shape in loaf pans (5 pans) and rise for 30 minutes.
Bake for 30 minutes at 350 degrees.

That's it!  mmmmmmm
